What to Be or Not to Be?

We all know the feeling. A customer waltzes through the door, bypasses the menu and orders the most complicated, off-the-wall, insane beverage known to man. “Oh, and can you make that organic, sugar free, fair-trade, and vegan please?” Whatever happened to just a great cup of coffee?

As consumers become more attuned to the issues surrounding the specialty coffee industry and grow increasingly health conscious, the demand for non-traditional beverage ingredients has many coffee shops in a tizzy. Do I stock loads of sugar free options? What’s my stance on fair-trade? Does paying more for organic coffee beans make sense for my bottom-line? These questions and many more are important to ask. However, as is often the case, these things more or less creep up on us. Before we know it our menu boards look more like a page from the dictionary than a well thought out presentation of our services. So where do we draw the line?

To begin, decide what type of business your customers really demand. If 100% organic, gluten free, no preservatives account for at least 70% of order requests, then you’d better raise the options and of course the price with it. However, if only a handful of your customers are looking for such menu selections, then it’s probably too soon to veer from what’s already working. While I know all of us want to offer the very best and certainly those healthier alternatives, it’s not always a practical business move, nor a smart one.

Let the demand dictate the menu. If your own preferences force customers to pay more when the need is not present, you might find your good intentions make for bad business. But what if you’re just getting started? The best solution is the balanced approach. A realistic menu that neither promises too much nor too little will allow you to test the waters and discover what your customers really want. Beware of advertising your shop as the absolute best, organic, healthiest option in town if you’re unable to deliver. If you are willing to provide this service then be prepared to go all the way.

Whatever the case, operate within your customers' comfort zone. Be what the majority wants you to be. Avoid making your customers fit into a box and savor their appreciation.
